It tastes as good as it sounds. My non gluten free hubby has been living on BLT’s for the past couple of week and they looked and smelled so good. I wanted to hurt him every time he had one. This though is just as good if not a little better than his old sandwiches. I hope you like it as much as I did. I started out making a batch of Pamela’s Bisquick type mix. You can mix this up and then just keep it in an airtight container in the freezer or fridge. It will keep for a long time. And there is so much you can do with it. But that is for another time.

BLT Pie

Ingredients

  • Bisquick Mix
  • ½ cups Pamela’s Ultimate Baking & Pancake Mix
  • ¾ cup shortening
  • BLT Pie
  • 12 slices bacon, crisply cooked, crumbled
  • 1 cup shredded Swiss cheese
  • ½ cup of Pamela’s Bisquick Mix
  • 1/3 cup mayo or salad dressing
  • ¾ cup milk
  • 1/8 tsp. pepper
  • 2 eggs
  • 2 tablespoons mayo or salad dressing
  • 1 cup shredded lettuce
  • 6 thin slices of tomato or chopped
  • Directions

    Cut the shortening in the Pamela’s Baking mix until no lumps appear.

    Preheat oven to 400°. Spray 9-inch pie plate with cooking spray. Layer bacon and cheese in pie plate.

    In medium bowl, stir Pamela’s Bisquick mix, 1/3 cup mayo, the milk, pepper and eggs with a wire whisk until blended. Pour into pie plate.

    Bake 35 to 30 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving. Spread 2 tablespoons mayo over top of pie. Sprinkle with lettuce. Places tomato on lettuce.
