Corn Casserole

Ingredients

  • 1 large onion- chopped
  • 2 medium green peppers- chopped
  • 1/2 cup butter
  • 1/8 cup cornstarch
  • 1 cups long grain rice-cooked
  • 1 cups frozen or fresh corn
  • 1 can diced tomatoes with juice
  • 4 hard cooked eggs- chopped
  • 2 1/2 cups sharp cheddar cheese
  • 2 T GF Worcestershire Sauce (Lea & Perrins)
  • 2-3 tsp hot pepper sauce
  • 2 tsp salt
  • 1 tsp pepper
  • Directions

    In a large skillet, saute onion and peppers in butter until tender. Stir in cornstarch, remove from heat, add remaining ingredients except for 1/2 cup of cheese. Pour into greased 2 1/2 qt baking dish. Bake uncovered for 45 minutes. Top with remaining cheese when at the last 5 minutes.
