
Corn Casserole
Ingredients
1 large onion- chopped
2 medium green peppers- chopped
1/2 cup butter
1/8 cup cornstarch
1 cups long grain rice-cooked
1 cups frozen or fresh corn
1 can diced tomatoes with juice
4 hard cooked eggs- chopped
2 1/2 cups sharp cheddar cheese
2 T GF Worcestershire Sauce (Lea & Perrins)
2-3 tsp hot pepper sauce
2 tsp salt
1 tsp pepper
Directions
In a large skillet, saute onion and peppers in butter until tender. Stir in cornstarch, remove from heat, add remaining ingredients except for 1/2 cup of cheese. Pour into greased 2 1/2 qt baking dish. Bake uncovered for 45 minutes. Top with remaining cheese when at the last 5 minutes.
