If you follow me on Twitter, you probably already know that I made some bread on Saturday night and had a few problems. I was craving pumpkin bread and remembered that on my recent trip Lori’s I picked up some Pumpkin Bread by Anna. I was hesitate to try it. I can be a very picky eater but I have to tell you, this was wonderful. This was a good as mom’s. It had a wonderful moist texture. Gary could not even tell it was gluten free. This is definitely going to be a staple in my kitchen.

Next time… I think I will put it in muffin pans and mix up some cream cheese or maple frosting. Yumm!!

Pumpkin Angel Food Cake
1 can pumpkin
1 tsp. vanilla
2 tsp. pumpkin spice
or (1/2 tsp. cinnamon, 1/2 tsp nutmeg, 1/4 tsp. cloves, 1/8 tsp. ginger)
1 Gluten-Free Pantry Angel Food Cake Mix
1 3/4 cup warm water

Mix pumpkin, vanilla, pumpkin spice. Make cake mix as directed minus vanilla. Fold 1/4 batter into pumpkin mixture. Gently fold in the remaining batter. Pour into 10″ tube pan. Bake at 350 for 40-50 minutes. Run knife around edge and invert as soon as it comes out of oven.

Once cooled and removed from pan sprinkle with cinnamon.

I had to get out of bed this morning just so that I could go to the dentist and get tortured today. It’s 8 hours later and still have a sore mouth. So I experimented a little. Before I was gluten free I used to love to go to the local pancake house in the fall time and have Pumpkin Pancakes with fresh maple syrup. These are pretty close and when served with freshly made maple syrup how can you go wrong.

Pumpkin Pancakes

1 Cup Pamela’s Baking & Pancake Mix
1 Egg
1 Tbsp. vegetable oil
1/4 Cup canned pumpkin
1/4 Tsp. nutmeg
1/4 Tsp. ginger
1/2 Tsp. Cinnamon
3/4 Cup Milk or Water

Mix all together.
